This is a simple recipe for a trusted Sunday meal with roasted potatoes and shallots. Source: Daily Food, October 2006. 1 hour and 15 minutes 15 minutes 4 Total time Prep Doses Ingredients 1 1/2 kilograms of small red new potatoes (10 to 12), well cleaned, halved or quartered if large 1 pound shallots (8 to 10), peeled, tied at the end and halved 2 tablespoons olive oil Coarse salt and ground pepper 1 1/2 kilograms of roasted beef, tied instructions 1. Preheat the oven to 400 degrees. On a large baking sheet, toss potatoes and shallots with oil; season with salt and black pepper. 2. Press the vegetables to the edges of the baking sheet; place the roast in the center. Turn the roast to coat with oil on the pan, and generously serve with salt and black pepper. 3. Bake, tossing the potatoes and shallots occasionally, until an instant-read thermometer inserted into the center of the meat registers 130 degrees for medium-rare, 40 to 50 minutes. Let the beef stand for 10 minutes, loosely covered with aluminum foil, before slicing and serving with potatoes and shallots.
