This recipe for triple milk-soaked cake can be made one day in advance and whipped with cream just before serving. Martha made this recipe for “Martha Bakes” episode 711. The ingredients include unsalted butter, room temperature, for baking, 6 large eggs, separated, 1 cup sugar, 1/2 teaspoon kosher salt, 1 cup unbleached all-purpose flour, sifted, 1 can (14 ounces) sweetened condensed milk, 1 can (12 ounces) evaporated milk, 1/4 cup whole milk, 2 cups heavy cream, and 1/4 cup confectioners sugar. To make the cake, preheat the oven to 325 degrees. Butter a 9-by-13-inch baking dish. In the bowl of an electric mixer fitted with the paddle attachment, beat the egg yolks and sugar on high speed until light and fluffy. In another bowl, whisk the egg whites and salt until soft peaks form. Using a rubber spatula, fold the whites into the yolks until almost combined. Sprinkle the flour over the egg mixture and fold it in gently (do not overmix). Spread the batter in the prepared dish. Bake until golden and pulling away from the sides, 20 to 25 minutes. Transfer to a rack and let cool for 20 minutes. In a medium bowl, whisk together the three milks; pour evenly over the cake. Cover with plastic wrap; chill for at least 1 hour and up to 1 day. To serve, whip the cream and confectioners sugar to soft peaks. Fill a pastry bag fitted with a 1/2-inch plain round tip with the whipped cream and pipe in a decorative pattern, if desired.
