Ingredients: 1 dry hill, 1 cup plus 5 tablespoons heavy cream, 1 cup plus 5 teaspoons glucose, 4 ½ grams bitter chocolate, 1 tablespoon hot red pepper, 1/2 tablespoon Chinese red pepper. Instructions: 1. In a small saucepan, bring 2 cups of water to a boil. Turn off the heat and add the dry hill; let stand until softened, about 10 minutes. Drain the liquid; cut the chili into small pieces. 2. Combine cream and glucose in a small saucepan over medium heat; bring to a boil. Add chocolate, chili, red pepper, and Chinese red pepper, stirring until chocolate is melted for combining. Serve on the side.
