These Icebox cookies get their name from the fact that the dough needs to be chilled before being cut into individual “cookies”. They are flavored with cocoa powder and finely ground black pepper. The recipe comes from Martha Stewart Living, November 1998. To make them, youll need all-purpose flour, cocoa powder, salt, black pepper, instant espresso, cinnamon, unsalted butter, granulated sugar, an egg, vanilla extract, and sanding sugar. Mix the dry ingredients together, then beat the butter and sugar until light and fluffy. Add the egg and vanilla, then mix in the dry ingredients. Chill the dough for at least an hour, then roll it out and cut into circles. Sprinkle with sanding sugar and black pepper, then bake for about 12 minutes. Let cool completely before storing in an airtight container for up to 2 days.
