This chocolate-oriented crème brûlée maintains the creaminess and caramelized sugar topping of the classic version. Although caramel and chocolate are considered sweets, the real secret to their allure is the bitterness, a natural component of cocoa and burnt sugar. This recipe makes 4 (or enough for 15 sandwiches). Ingredients for the cream include heavy cream, sugar, bitter chocolate, and egg yolks. The instructions involve heating the cream and sugar, adding the chocolate, beating the egg yolks and sugar, and combining the two mixtures. The cream is then poured into ramekins and baked in a water bath for 1-1.5 hours. After cooling, the cream is topped with sugar and caramelized with a kitchen torch or broiled in the oven. The cooked cream can be refrigerated overnight and caramelized before serving.
