Ganache is a luxurious filling made from heavy cream and dark chocolate. Here it is poured into a sweet almond pastry shell. Martha made this recipe for Martha Bakes episode 603. Source: Everyday Food, November 2005. 2 hours 20 minutes 25 minutes 10 Total time Prep Doses Yield Ingredients 3 tablespoons chopped blanched almonds 6 tablespoons sugar 1 1/4 cups (with a spoon and leveled) unbleached all-purpose flour 1/4 teaspoon kosher salt 6 tablespoons cold unsalted butter, cut into pieces 12 grams of bitter chocolate, coarsely chopped 1 1/4 cups heavy cream 1 teaspoon pure vanilla extract Lightly sweetened whipped cream, for serving (optional) Instructions 1. Preheat the oven to 350 degrees. Make the dough: In a food processor, pulse the almonds until finely ground. Add sugar, flour, and salt; pulse to combine. Add butter, pulsing until coarse crumbs form, without large lumps (the dough should come together when pressed with fingers). 2. Immediately transfer the dough to a 9-inch tart pan with a removable bottom. Using a measuring cup, evenly press the dough into the bottom and up the sides of the pan. 3. Bake in the center of the oven until golden brown and firm to the touch, about 20 minutes. Transfer to a rack to cool completely, about 1 hour. 4. Make ganache: Place the chocolate in a large mixing bowl. In a small saucepan, prepare the cream. Pour hot cream, through a sieve, over the chocolate. Stir until smooth and creamy. Mix in vanilla. 5. Pour the chocolate mixture into the center of the cooled tart shell (if the chocolate is coarse, pass it through a sieve). Let stand until set, about 2 hours, or chill for 1 hour. Serve with whipped cream, if desired. Chefs notes Use a dry measuring cup to smooth the dough evenly in the pan.
