These Madeleines with lemon are classic, calm and undoubtedly French. The recipe calls for 10 tablespoons of unsalted butter, melted, plus more for the Madeleine pan, 1/2 cup all-purpose flour, plus more for the pan, 1/2 cup cake flour, 1 pinch of salt, 2 large eggs, 2/3 cup sugar, 1 teaspoon pure vanilla extract, grated zest of 1 lemon, and confectioners sugar for dusting. The instructions are to preheat the oven to 375 degrees, butter and lightly flour the Madeleine pan, whisk together the two flours and salt in a medium bowl, beat the eggs and sugar together in the bowl of an electric mixer fitted with the paddle attachment, add the vanilla and lemon zest, then the flour mixture; beat until just combined. With mixer on low, pour in melted butter in a steady stream; mix until incorporated. Spoon batter into each mold. Bake for 5 minutes; reduce oven temperature to 350 degrees. Bake until golden, 8 to 10 minutes more. Let cool slightly; remove from pan. Dust with confectioners sugar and serve. The chefs note is that Madeleines are best on the day they are made.
