These traditionally sweet Italian biscuits, handed down from Aunt Kalinina to Lucinda, are made sweet with Marsala wine and a light lemon glaze. From the book “Russian-Italian cuisine of Lucinda” by Lucinda Scala Quinn (Willie). Source: Mad Hungry, October 2010. Makes 2 1/2 dozen.
Ingredients: For the biscuits: – 3 cups all-purpose flour – 2 tablespoons baking powder – 1 teaspoon coarse salt – 1/2 cup sugar – 1 large egg – 1/2 cup olive oil – 1/2 cup Marsala wine
For the glaze: – 2 tablespoons milk – 1 tablespoon lemon juice – 1 cup confectioners sugar
Instructions: 1. Preheat the oven to 375 degrees. 2. In a mixing bowl, whisk together the flour, baking powder, and salt. 3. In a separate larger bowl, whisk together the sugar and egg until well combined. Stir in the olive oil and wine. Slowly add the flour mixture, stirring until well combined and the dough is lightly kneaded and medium-soft. 4. On a clean surface, use your hands to roll the dough into 1/2-inch thick logs. Cut each log into 6-inch pieces, folding each piece into a circle shape. Press the dough with your fingers to compact it. Place on a baking sheet lined with parchment paper. 5. Bake for 15-20 minutes or until lightly golden. Remove to a cooling rack and cool completely. 6. If you want to glaze them, whisk together 2 tablespoons milk and 1 tablespoon lemon juice in 1 cup confectioners sugar. This should be the consistency of thick cream. Dip one side of the biscuit in the glaze and let dry.
