These bright orange candied fruits make perfect garnishes for winter cakes and cocktails, like Kumquat Sour. Source: Martha Stewart Living, March 2000. Makes about 2 cups. Ingredients: 1 pint kumquats, 1 1/2 cups sugar. Instructions: 1. Cut kumquats in half crosswise and remove seeds. Place in a medium saucepan with enough water to cover and bring to a boil over medium-high heat. Drain in a sieve and repeat process three more times. 2. Place sugar and 1 cup water in a medium saucepan and bring to a boil. When all the sugar has dissolved, reduce heat to low and add kumquats. Cover and cook for 40 to 45 minutes, until translucent. Remove from heat and let cool completely in syrup. Candied kumquats can be stored in syrup in an airtight plastic container for up to 3 days.
