This delicious pie recipe is kindly provided by Lucinda Scala Quinn. Source: Martha Stewart Show, October Fall 2008. Make a 13-by-9 1/4-inch pie. Ingredients: 1/4 cup all-purpose flour, plus more for work surface. Paté Brisée by Lucinda. 1 vanilla bean. 3/4 cup sugar. Coarse salt. 1 teaspoon ground cinnamon. 3 apples with beeswax, peeled, cored, and cut into 1/2-inch wedges. 3 Cortland apples, peeled, cored, and cut into 1/2-inch wedges. 3 Granny Smith apples, peeled, cored, and cut into 1/2-inch wedges. 1 tablespoon fresh lemon juice. 1 pint fresh raspberries. 2 tablespoons unsalted butter, cut into small pieces. 1 large egg. 1 tablespoon heavy cream. Confectioners sugar, for dusting. Instructions: 1. Preheat oven to 375 degrees. On a lightly floured surface, roll out a piece of paté brisée to a 15-by-12-inch rectangle. Place in a 13-by-9 1/4-inch baking sheet, pressing into corners. Trim to a 1-inch overhang all around. Chill while assembling filling. 2. Using a sharp knife, split vanilla bean and scrape seeds into a large bowl with 1/4 cup flour, sugar, salt, cinnamon, apples, and lemon juice; toss to combine. Pour mixture into chilled pie shell. Top with raspberries and dot with butter. 3. On a lightly floured work surface, roll out remaining paté brisée to a 15-by-12-inch rectangle; cover filling. Fold edge of bottom crust over top crust. Pinch edges to seal. Using a sharp knife, make slits in top crust to create a star to release steam. Chill for 20 minutes. 4. In a small bowl, whisk together egg and heavy cream. Brush crust with egg mixture and sprinkle with sanding sugar. Transfer to oven and bake until crust is dark golden brown, 65 to 75 minutes. Let cool slightly before cutting and serving.
