This recipe will make a lot of fresh, thinly sliced fruit. It makes four 2 x 2 inch pastries. Ingredients include 2 sheets of phyllo dough, plastic wrap, a damp cloth, 1 tablespoon of unsalted butter, 2 very ripe peaches, sliced into wedges, quartered, and sliced 1/4 inch thick, and 8 teaspoons of light brown sugar. Instructions include preheating the oven to 400 degrees, removing one sheet of phyllo from the plastic wrap, brushing with half of the melted butter, placing the second sheet on top, and cutting into 8 rectangles. Place 4 rectangles on a parchment-lined baking sheet, spray with cooking spray, top with more rectangles, add sliced peaches and brown sugar, and bake for 10 minutes. Sprinkle with more brown sugar and bake for another 5-7 minutes until the sugar is melted and caramelized.
