These delicate waffles are named for their shape, similar to tiles, which is achieved by draping freshly baked cookies over a movable rod. Source: Martha Stewart Living, March 2003. Makes 2 dozen Yield Ingredients 5 tablespoons unsalted butter, cut into small pieces 1/2 cup sugar 2 tablespoons freshly squeezed orange juice 1/4 cup all-purpose flour 2/3 cup chopped blanched almonds (2 ounces) Finely grated zest of half an orange Instructions 1. Preheat the oven to 375 degrees. Line two baking sheets with parchment paper or Silpat (French baking mat). 2. In a small saucepan over medium heat, combine the butter, sugar, and orange juice, stirring until the butter is completely melted. Remove from the heat and add the flour, almonds, and orange zest, stirring to combine. 3. Place a teaspoonful of dough on the prepared baking sheet and smooth with the back of a spoon. Repeat to make about 6 cookies on each sheet, spacing them about 4 inches apart. 4. Bake one sheet at a time, rotating the sheet once the cookies are completely flattened, until the cookies are golden, 8 to 10 minutes. 5. Transfer the baking sheet to a wire rack; cool for 20 seconds. Using a thin spatula, carefully lift the cookies; quickly drape over a movable rod. Let stand until completely cooled and hardened. Chefs Notes For best results, make these cookies on the same day you plan to serve them, as they are quite fragile.
