This delicious recipe for baked pineapple with seafood is provided by Roberto Santanbanes and can be found in his cookbook “The New Mexican Table by Rosa”. Source: The Martha Stewart Show, Fall 2007. The recipe includes a large ripe pineapple, unsalted butter, onion, garlic, bay leaves, sugar, chili powder, Arab spice, coarse salt, Guajillo chili and pineapple adobo, firm white fish fillets, shrimp, fresh cilantro, mussels, and grated Emmental or Swiss cheese. The instructions involve cutting the pineapple in half, removing the flesh, cooking the onion and garlic, adding the pineapple, spices, and sugar, stuffing the pineapple shells with the seafood mixture and adobo sauce, baking for 20 minutes, adding mussels and cheese, and baking for another 20 minutes.
