These sesame shrimp, covered in aromatic sesame seeds and quickly sautéed in a little sesame oil, are full of flavor and very low in fat. This recipe serves 4 and requires sesame seeds, dark sesame oil, vinegar, low-sodium soy sauce, 12 large peeled and deveined shrimp, and four 6-inch bamboo skewers. To prepare, toast the sesame seeds in a small pan over medium heat until fragrant. In a shallow dish, combine 2 tablespoons of sesame seeds with sesame oil, vinegar, and soy sauce. Skewer 3 shrimp onto each skewer, piercing through the head and tail, and place in the marinade. Cover and set aside for 10 minutes. Spread the remaining sesame seeds on a plate. Transfer the skewers to the plate and coat with sesame seeds. Heat a pan over medium-high heat and sauté the shrimp skewers for 2 to 3 minutes on each side or until opaque. Pour the remaining marinade over the shrimp and cook until the marinade thickens. Serve warm or at room temperature.
