Maybe nothing captures the sweet, salty essence of the sea like the oyster in half shell. The Oyster Hog Island company in Marshall, California harvests some of the tastiest oysters in the USA. Michael Chaustorn shares one of his favorite recipes. Makes 12 servings. Ingredients: Hot rock salt for serving on platter, 12 Hog Island oysters, 1/4 cup Zinfandel BBQ sauce, 1/4 cup Pinot Gris Compound Butter, Lemon wedges for serving. Instructions: 1. Heat gas grill to high. Place rock salt in a pot and place on grill to heat. 2. Place oysters, curved side down, on grill. Cook until they begin to open, about 6 minutes. Using tongs, remove from grill and discard top shell. 3. Divide BBQ sauce among 6 of the oysters. Divide compound butter among remaining 6 oysters. Return to grill until butter melts. 4. Place rock salt on platters. Arrange oysters on salt. Garnish with lemon wedges. Serve immediately.
