This simple pasta has tons of flavor thanks to several different preparations of garlic: fried, minced, and infused in oil. Source: Mad Hungry, Episode 1124 Ingredients 1 pound spaghetti 1/2 cup olive oil 6 cloves garlic: 2 thinly sliced, 2 minced, 2 smashed 1/2 cup water or chicken broth 1 cup grated Romano cheese, plus more for serving 1/2 teaspoon coarse ground black pepper Instructions 1. Cook pasta in salted boiling water and drain. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the sliced garlic. Cook until golden brown, about 2 minutes, and remove from the skillet. 2. Add grated garlic and cook until fragrant but not browned, about 30 seconds. Add the spaghetti and liquid to the skillet and heat through. Remove from heat and toss with the cheese, black pepper, browned garlic slices, and smashed garlic. Serve with additional grated cheese.
