Prepare the pastry. 2. Preheat the oven to 375 degrees. If using, mix red pepper with cheese. Sprinkle the mixture on a work surface. Lay the pastry on top, pressing the dough into the cheese to adhere. If desired, sprinkle the top of the pastry with poppy seeds. Press down carefully with a rolling pin to adhere. 3. Trim the edges with a pastry wheel. (You will have a rectangle that is approximately 9 by 12 inches.) 4. Cut the cheese straws into 3/4-inch strips and twist from one end to the other. Arrange strips, spaced 1 1/2 inches apart, on a baking sheet lined with Silpat. Chill the twists on baking sheets until very firm, about 45 minutes. 5. Bake the cheese straws in the center of the oven until golden brown and puffed, about 20 to 25 minutes. Transfer the straws to a basket to cool.
