This traditional Vietnamese appetizer features freshly pureed shrimp paste formed around sticks of caramelized sugar cane and then grilled until lightly charred. The recipe includes ingredients such as canola oil, chopped onions and shallots, Asian fish sauce, salt, sugar, garlic, white pepper, cornstarch, baking powder, and egg whites. The shrimp paste is shaped into balls and then pressed onto the sugar cane sticks, leaving about 1 1/2 inches exposed at the top and bottom. The sugar cane sticks are then steamed and grilled until the shrimp paste is opaque and lightly charred. This dish is a delicious and unique way to enjoy shrimp and is perfect for a summer barbecue or party.
