This delicious recipe for shrimp is offered with the kind assistance of Michael Eisner. Source: “Martha Stewart” exhibition, early summer 2007. Makes about 20. Ingredients: 1/3 cup chopped canned chestnuts, 1/4 cup chopped garnishes, 1/2 pound and chopped shrimp, 2 tablespoons toasted sesame oil, 2 tablespoons peanut oil, 1 tablespoon soup spoon, 2 teaspoons cornstarch, 1 to 2 teaspoons sugar, optional, 1/2 teaspoon sea salt, 1/4 teaspoon freshly ground black pepper, 1 package wonton wrappers, shau mai dipping sauce. Instructions: 1. In a large bowl, mix together chestnuts, shrimp, sesame oil, peanut oil, wine, cornstarch, sugar if desired, salt, and black pepper. 2. Using a knife, trim the edges of each wonton wrapper to form a circle. Place 1 tablespoon of filling in the center of each wrapper; moisten the edges with water. Twist your hand around the wrapper, gathering pleats up and around the filling. Press the pleats lightly around the filling to seal. 3. Fill a large skillet or steamer with 2 cups of water; bring to a boil. Place the bamboo steamer in the skillet and line with a damp piece of cheesecloth or parchment paper. Place shau mai on the steamer, spaced about 1 inch apart. Cover and cook until filled, for 6 to 8 minutes. Serve immediately with dipping sauce.
