These apple chips make a wonderful snack or appetizer for a Cuban-themed meal. If you cant find green (unripe) plantains, use plenty of green bananas instead. Source: Everyday Food, September 2010. 4 servings. Ingredients: 2 pounds of plantains or green bananas, marked, peeled, and thinly sliced diagonally. 1/4 cup vegetable oil. Coarse salt and ground pepper. Pico de Gallo with Plantain chips, for serving (optional). Instructions: 1. Preheat the oven to 350 degrees, with racks in the upper and lower thirds. Divide the planets between two baking sheets. Toss with oil, then arrange in a single layer on sheets. Season with salt and black pepper. Bake until golden and crisp, 30 to 35 minutes, rotating sheets and flipping plantains in the middle. Drain the chips on paper towels. Serve with Pico de Gallo, if desired.
