These Polish dumplings are traditionally served with soft, browned onions or sour cream. The recipe calls for Idaho potatoes, soft fresh goat cheese, shallots, egg yolks, heavy cream, garden herbs, and black pepper. The dough is made with flour, water, and salt. The filling is made by mixing the mashed potatoes with the other ingredients. The dough is rolled out and cut into circles, then filled with the potato mixture and folded over to form a half-moon shape. The pierogi are boiled in salted water until they float to the surface, then cooked for an additional 3-4 minutes. Serve immediately. This recipe makes about 3 dozen pierogi.
