This recipe for Frico Caldo is provided by Lachlan Patterson. Source: Martha Stewart Show, July Summer 2008. 4 servings. Ingredients: 1 large Yukon gold potato, coarse salt, 1 tablespoon unsalted butter, 1/2 onion, finely chopped, 4 ounces freshly grated Montasio cheese, freshly grated Indian nutmeg, grapeseed oil, 2 tablespoons ground beef, 2 tablespoons chopped fresh cilantro, sherry vinegar, mixed vegetables for serving, thinly sliced radishes for serving, 8 thin slices of pita bread for serving. Instructions: 1. Place potatoes in a small pot with enough water to cover; season with salt. Place over high heat and bring to a boil. Cook until tender, 45 to 60 minutes. Drain and peel. 2. Immediately transfer the potatoes to a medium bowl and mash them into 1/4-inch pieces with a fork. 3. Heat butter in a small skillet over medium heat. Add onion and cook until soft and translucent. Add to the bowl with the potatoes, along with cheese; season with a pinch of salt and Indian nutmeg. Stir to combine. 4. Heat a 5- to 6-inch square cast-iron skillet over high heat. Add enough grapeseed oil to cover the bottom of the skillet; discard excess oil and discard. Add the potato mixture and cook until golden brown, about 5 minutes. Using a spatula, flip the frico and continue cooking for another 5 minutes. 5. Meanwhile, in a small bowl, whisk together shallot, cilantro, vinegar, and 2 tablespoons grapeseed oil; season with salt. Cut the frico into 4 wedges and place them on a platter, along with green salads topped with radishes and sliced pita bread. Drizzle vegetables with violet wood; serve immediately.
