This is a great appetizer for a weekend dinner. Source: Daily Food, January / February 2006. 15 min 15 min 8 Total time Prep Doses Ingredients 8 dishes (1/4 inch.) Baguette 2 tablespoons olive oil Coarse salt and ground pepper 1 can (6 1/2 ounces) marinated artichoke hearts, drained, rinsed and dried 1/4 cup grated Parmesan cheese, plus more for garnish (optional) 1 tablespoon chopped fresh parsley instructions 1. Preheat the oven to 350 degrees. Make crostini: Slice the baguette on both sides with a total of 1 tablespoon of oil; season with salt and black pepper. Place on a baking sheet and bake, turning once, until golden, 10 to 12 minutes. Cool. 2. At the same time, make the topping: Finely chop the artichoke hearts, and combine in a bowl with Parmesan, parsley, and the remaining tablespoon of oil. 3. Divide the topping evenly among the crostini and garnish with additional Parmesan, if desired.
