This delicious recipe for asparagus soup is courtesy of the “Bold Italian” company Scott Conant. Source: Martha Stewart Show, summer 2007. To serve, heat 2 tablespoons of olive oil in a medium saucepan over medium-high heat. Add shallots, red pepper flakes, and a pinch of salt. Cook, stirring occasionally, until the shallots are tender and browned, about 5 minutes. Add chopped asparagus and cook for 1 minute. Stir in chicken broth and 1 cup of water; bring to a boil. Reduce heat to simmer; continue cooking until the asparagus is tender, about 15 minutes. Meanwhile, prepare an ice water bath. Fill a medium bowl with lightly sprayed water and bring to a boil. Add salt, return to a boil, and add asparagus tips. Cook until tender. Transfer asparagus tips to ice water; let cool for about 1 minute. Drain and set aside. Remove from heat; add spinach. Using an immersion blender, puree the soup in the remaining 2 tablespoons of oil. Return to heat and cook until heated through; season with salt. Divide the soup evenly among 4 bowls, garnish with asparagus tips, and serve immediately.
