This thick chicken chili will satisfy even the most discerning carnivore. The recipe was featured on the “Mad Hungry” television show. Source: Martha Stewart Living, October 2010. This recipe takes 50 minutes total, with 20 minutes of prep time and serves 6. The ingredients include 10 plum tomatoes, halved, 1 jalapeno chile, halved (seeded if desired), 1 white onion, peeled and halved, 4 garlic cloves, peeled, 2 tablespoons extra-virgin olive oil, 2 pounds boneless, skinless chicken thighs, cut into 1/2-inch cubes, 1/4 cup chili powder, salt, 2 canned chipotle chiles in adobo sauce, minced, 1 3/4 cups homemade or store-bought low-sodium chicken broth, 1 can (15 ounces) beans, drained. The instructions are to preheat the broiler, arrange the tomatoes, jalapeno, onion, and garlic cut-side down on a baking sheet, broil until charred, pulse the tomatoes and jalapeno in a blender or food processor until chunky, brown the chicken in batches, add the onion and garlic to the pan, cook until soft and golden, add the chili powder and salt, cook for 1 minute, stir in the chipotles and chicken, increase the heat, add the tomato mixture, cook until the flavors meld, stir in the beans, cook for 10 minutes, and serve with desired garnishes. The cooks notes suggest that the chili can be stored in the refrigerator for up to 5 days or frozen for up to 1 month.
