This easy-to-cook chicken dish will fill your kitchen with a tempting aroma. Source: Martha Stewart Living, January 2004. One hour 10 min 4 Total time Prep Doses Ingredients 1 whole chicken (about 4 pounds), cut into 8 pieces 1 tablespoon unsalted butter, softened 2 tablespoons coarse salt 1 teaspoon freshly ground black pepper 2 onions, quartered lengthwise 10 garlic cloves, peeled 6 sprigs of thyme, plus more for garnish Instructions 1. Preheat the oven to 475 degrees. Rinse the chicken pieces; dry. Rub the chicken with butter and sprinkle with salt and black pepper. 2. Place the chicken in a small skillet. Arrange onions, garlic, and thyme sprigs, which are carried over and under the chicken. Bake; after 20 minutes, it is beaten with a skillet. Continue to bake until the chicken is golden and cooked, another 15-20 minutes. Transfer the chicken to a plate and set aside. 3. Pour the skillet through a sieve into a small bowl; discard the solids. Arrange onions and all three garlic cloves around the chicken on a platter. Beat the remaining garlic cloves with skillet juices. Demonstrate the juice again; discard the solids. Pour the sauce over the chicken; serve garnished with thyme branches. Chefs notes For crispier skin, rinse the chicken before baking.
