This recipe for baked pasta with Greek flavors is irresistible for a “one-pot” dinner. The fresh salad with fennel, parsley, parmesan, and lemon is a perfect complement. For a vegetarian main course, omit the chicken and use vegetable broth. Source: Everyday Food, November 2009. Total time: 50 min. Prep time: 10 min. Serves 6. Ingredients: 4 cups low-sodium chicken broth, 1 tbsp unsalted butter, 1 1/4 tsp coarse salt, 1/4 tsp black pepper, 1 kg chicken breast, cut into 1-inch pieces, 1 pound orzo, 2 cups crumbled feta (4 oz), 1/4 cup chopped fresh dill, 2 tbsp finely grated lemon zest, plus 1 tbsp fresh lemon juice, 1 cup grated Parmesan. Instructions: Preheat oven to 400 degrees. In a pot, combine broth, 3/4 cup water, butter, salt, and pepper. In a 3-quart baking dish, combine chicken, orzo, feta, dill, lemon zest, and juice. Pour broth mixture over orzo and stir once to combine. Bake until orzo is tender and cooking liquid is creamy, about 40 minutes. Sprinkle Parmesan on top and let stand for 5 minutes before serving.
