This light food is almost entirely hands-free, leaving you with extra time at the end of the week. Source: Daily Food, April 2010. 40 min 4 Total time Doses Ingredients 2 kilograms of zucchini, halved and quartered lengthwise 3/4 pound carrots, cut into 1/2-4-inch pieces 2 medium red onions, quartered 2 tablespoons extra-virgin olive oil Coarse salt and ground pepper Tangy Chicken Breasts and Orzo Pilaf Instructions 1. Preheat the oven to 400 degrees. In a large bowl, toss the vegetables with oil; season with salt and black pepper. Spread the vegetables on two baking sheets and bake until tender and golden, 30-35 minutes. About 20 minutes into cooking, place the chicken and sauce in a small baking dish, cover with foil, and bake together with the vegetables until heated through, about 15 minutes. Slice the chicken and serve with vegetables and sauce.
