This recipe comes from Marthas book “One Pot: 120+ Easy Dishes from Your Skillet, Slow Cooker, Stockpot, and More.” Ingredients include coarse salt, 1 tablespoon of red pepper, 1/2 tablespoon of dried oregano, 1 whole chicken (4 to 5 pounds), 2 large carrots cut into 2-inch lengths, 2 medium sweet potatoes cut into 3/4-inch wedges, 1 head of garlic halved, and 3 tablespoons of extra-virgin olive oil, divided. Instructions include preheating the oven to 425 degrees, rubbing the chicken with 1 tablespoon of oil, combining red pepper, oregano, and 1 tablespoon of salt, rubbing the chicken with the mixture, tucking the wings under the body, placing the chicken on a baking sheet, tossing the carrots and sweet potatoes with 1 tablespoon of oil and seasoning with salt, scattering them around the chicken, roasting for 20 minutes, turning the vegetables and adding garlic squeezed with 1 tablespoon of oil to the pan, roasting until a thermometer inserted into the thickest part of the thigh reads 165 degrees F, for 25 to 35 minutes, tenting the chicken with foil to prevent overbrowning if necessary, letting it rest for 10 minutes before carving and serving, and taking the carrots and sweet potatoes out to roast until golden, for 10 minutes, brushing with pan juices before serving.
