This is a family recipe shared with us by Norma Darden, owner of Miss Mamies and Miss Maudes restaurants in Harlem, New York. Bitter sauce is also a delicious spread for steaks before grilling. The recipe calls for fresh rosemary, garlic, yellow mustard, lemon, celery, onion, salt, pepper, and dry white wine. The instructions are to heat the oven to 375 degrees, rub each chicken inside and out with half a lemon, stuff each chicken with celery, onion, rosemary, and garlic, rub the chickens all over with mustard mixture, sprinkle with salt and pepper, place them on a rack in a large roasting pan, pour wine over them, and bake for 1 1/2 to 1 3/4 hours, basting every 15 minutes. Remove from the oven, transfer the chickens to a platter, and let them rest for 10 minutes. Meanwhile, remove the rack from the roasting pan and place the pan on the stove over medium heat. Cook until the liquid is reduced slightly, about 5 minutes. Pour the reduced liquid over the chickens or serve it on the side.
