This delicious recipe for curry chicken is made with Almond Dream, a source of antioxidants, vitamins, and calcium. Source: Martha Stewart Show, Episode 5128. Ingredients: 2 tablespoons olive oil, coarse salt and freshly ground pepper, 8 skin-on chicken thighs, 1 large yellow onion, thinly sliced, 1 teaspoon Madras curry powder, 1/2 teaspoon freshly grated nutmeg, 1 cinnamon stick, 2 cups Almond Dream Original almond milk, 1/2 cup chopped toasted almonds, 1/4 cup roughly chopped cilantro, Rice pilaf with shallots, for serving. Instructions: 1. Preheat the oven to 400 degrees. 2. Heat the oil in a medium-large skillet. Season the chicken with salt and pepper and place the chicken, skin-side down, in the skillet. Cook until the skin is golden brown and crisp, about 5 minutes; turn the chicken and cook for an additional 2 to 3 minutes. Transfer the chicken to a plate and set aside. 3. Add the onion to the skillet and reduce the heat to medium-low. Cook, stirring occasionally, until soft and beginning to caramelize, about 10 minutes. Stir in the curry powder, nutmeg, cinnamon, and Almond Dream; season with salt and black pepper; bring to a simmer. Return the chicken to the skillet, skin-side up, and transfer to the oven. Cook until the chicken is cooked through, about 35 minutes. 4. Remove from the oven and serve with salt and black pepper. Garnish with almonds and cilantro; serve with rice pilaf.
