This delicious spread is perfect with cookies. Source: Everyday Food, March 2006. Total time: 45 min. Prep: 15 min. Serves 4. Ingredients: Coarse salt and ground pepper, 2 cups shelled edamame (frozen), 3 large garlic cloves (peeled), 1 tsp grated lemongrass, 1-2 tbsp fresh lemon juice, 1 tsp olive oil, Radishes (or other vegetables) and rice crackers for serving. Instructions: 1. Cook edamame and garlic in a medium pot of boiling salted water until edamame is tender, about 5 minutes. Drain. 2. In a food processor, puree edamame mixture, garlic, lemongrass, lemon juice, oil, and 1/2 cup water until very smooth, about 2 minutes, scraping down sides of bowl as needed. Thin with more water, 1 tablespoon at a time, if necessary. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. 3. Chill for at least 30 minutes or up to 1 day. (Thin with more water, if necessary.) Serve with radishes and crackers. Cooks Notes: Chill this spread for at least 30 minutes before serving.
