This recipe for delicious grilled chicken is a compliment from Jonathan Waxman and can be found in his cookbook, “Great American Cook”. Serves 4. Ingredients include a whole chicken (3 1/2 to 4 pounds), coarse salt and freshly ground black pepper, 1 to 2 tablespoons of olive oil, mashed potatoes from Jonathan Waxman, and easy sautéed spinach. Directions include preheating the oven to 475 degrees, removing giblets and trimming excess fat from the chicken, rinsing the chicken well and leaving it in warm water for 20 minutes, covering the bottom of a heavy roasting pan with 1 to 2 tablespoons of olive oil, adding the chicken with salt and pepper and mixing with olive oil, transferring the chicken to the prepared pan, roasting and shaking the pan every 5 minutes until the thermometer reads 165 degrees in the thickest part of the thigh, and letting the chicken rest for 10 minutes before carving and serving with potatoes and spinach.
