This recipe for an easy sauce made from orange juice, lemon juice, and honey is an irresistible dip for chicken fingers. Use the sauce, minus the honey, as a savory food if youre making chicken fingers from scratch. Source: Martha Stewart Kids, Winter/Spring. Ingredients: 2 grated orange zest, 3/4 cup orange juice, 1/4 cup fresh lemon juice, 2 cloves minced garlic, 3/4 teaspoon dry mustard, 1/2 teaspoon salt, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 2 boneless, skinless chicken breasts (about 1 3/4 pounds), cut into 1/2-inch-wide strips, 1/2 cup plain breadcrumbs, 1 tablespoon unsalted butter, 1/2 teaspoon freshly ground pepper, 1 tablespoon cornstarch, 1/4 cup honey, vegetable oil spray. Directions: 1. In a large nonreactive dish, whisk together the orange zest, both juices, garlic, dry mustard, 1/4 teaspoon salt, ginger, and nutmeg. Add the chicken, cover, and refrigerate for 1 hour. 2. Preheat the oven to 400 degrees. In a food processor, pulse the breadcrumbs, butter, remaining 1/4 teaspoon salt, and pepper until the breadcrumbs are fine. Transfer to a shallow bowl. Remove the chicken from the brine, allowing excess to drip off; coat in the breadcrumb mixture. Place on a lightly oiled baking sheet; bake until crisp and browned, 12 to 14 minutes. 3. Meanwhile, strain the marinade into a small saucepan. Measure out 2 tablespoons. Mix with the cornstarch in a small bowl. Bring the remaining marinade to a boil in a small saucepan. Spray in the cornstarch mixture, whisking constantly; boil, stirring, for 1 minute more. Let cool slightly; stir in the honey. Serve with the chicken fingers. Cooks Notes: If you like, you can buy chicken fingers and just make the dipping sauce. Repeat the marinade in step 1, then follow step 3 (no need to press).
