This Thanksgiving, save valuable oven space by grilling your turkey over charcoal. Check out our step-by-step photo tutorial. Recipe source: Martha Stewart Living, November 2012. Total time: 4 hours 50 minutes. Prep time: 30 minutes. Serves 8 to 10. Ingredients: 1 turkey (12 to 15 pounds), patted dry. Aromatics mixture, such as sage sprigs, onion wedges, and half garlic heads, for stuffing cavity. 1/2 cup extra-virgin olive oil. 1/2 cup kosher salt. 2 1/2 tablespoons freshly ground black pepper. Directions: 1. Let turkey sit at room temperature for at least 1 hour. Stuff turkey with aromatics or stuffing of your choice; truss cavity tightly. 2. Open grill vents. Place chimney starter on small bottom grate, fill with 50 charcoal briquettes, and light; let burn until gray. Remove chimney starter and place center roasting pan on grate, pour out coals, and spread evenly along each long side of pan. (Be careful not to sprinkle ash into pan, as it will collect turkey drippings needed for gravy.) Top with main grill grate. 3. Mix oil, salt, and pepper in a small bowl. Rub or brush mixture onto turkey. 4. Place turkey on top grill grate, directly over roasting pan, and cover with grill lid (keeping lid vents open). Every 45 minutes, add 8 unlit charcoal briquettes along each long side of roasting pan to maintain even heat. (Some grates have a rack on either side that allows for this. Otherwise youll need a helper to lift grate with turkey while adding coals.) Cook turkey until thermometer inserted into thickest part of thigh (and stuffing) reads 165 degrees, 2 to 3 hours (about 10 minutes per pound with aromatics, 12 minutes with stuffing). Remove from heat and let rest for 20 minutes before carving. Cooks note: Youll need a covered kettle grill with a diameter of at least 22 inches, such as a Weber. Youll also need a chimney starter, grilling tools, a bag of the highest-quality charcoal briquettes, and a disposable heatproof aluminum roasting pan.
