This homemade strawberry jelly will take you out of this world forever. The recipe is from Everyday Food, May 2006. It takes 4 hours and 30 minutes to prepare and makes 4 servings. The ingredients include 1 1/2 pounds of strawberries, 3/4 cup of sugar, 2 tablespoons of fresh lemon juice, and 2 packages (1/4 ounce each) of unflavored gelatin. The directions are to mix the strawberries, sugar, and lemon juice in a medium bowl and let it sit for 10 minutes. Sprinkle the gelatin over cold water and let it sit for 5 minutes. Blend the strawberry mixture in a blender and strain it through a fine mesh sieve into a large measuring cup. Add enough water to the strained juice to measure a total of 3 cups. Heat the gelatin until it starts to bubble around the edges, then stir in the strawberry juice. Divide the mixture among four cups and chill for 3 to 4 hours. To serve, top the chilled jelly with sliced strawberries and mint leaves.
