This recipe for Easter is amazing and can be found in Arthur Schwartzs book “Jewish Home Cooking”. You can replace your own spices in this recipe if you wish. The Martha Stewart Show, April Spring 2008 makes one 8-inch square cake. Ingredients include cooking spray, 1/2 cup coarsely chopped walnuts or pecans, 1 1/2 cups sugar, 3/4 teaspoon ground cinnamon, 3/4 teaspoon freshly grated nutmeg, 3/4 teaspoon ground allspice, 3/4 teaspoon ground ginger, 3 large eggs, 1/3 cup vegetable oil, plus more for the baking dish, 3/4 cup matzo cake meal, 5 medium apples, such as Golden Delicious or Crispin, peeled, cored, and sliced into 1/4-inch-thick wedges (about 5 cups), 1/3 cup raisins (optional). Directions include preheating the oven to 350 degrees with a rack in the center. Spray an 8-inch square glass baking dish with cooking spray; set aside. Mix the walnuts, 3/4 cup sugar, cinnamon, nutmeg, allspice, and ginger in a medium bowl; set aside. In the bowl of an electric mixer fitted with the whisk attachment, beat the eggs on medium speed until well combined. Add the remaining 3/4 cup sugar, 2 tablespoons at a time, until the mixture is thick and frothy. With the mixer running, slowly pour in the oil. Scrape down the sides of the bowl as necessary. Stir in the matzo cake meal. Pour half of the batter into the prepared cake pan. Sprinkle over half of the walnut mixture and half of the apples and raisins. Pour over the remaining batter and top with the remaining apples and walnut mixture. Transfer the cake to the oven and bake until the sides of the cake pull away slightly from the baking dish and the sauce begins to caramelize, about 1 hour and 15 minutes. Remove the cake from the oven and let it cool completely before cutting. Keep the cake tightly covered with plastic wrap for up to 2 days, where the flavor improves with age.
