This recipe for Blondies proves that simple ingredients like flour, brown sugar, butter, and eggs can be spun into pure gold – without the need for a mixer. Add a little dark rum and a bunch of toasted walnuts to enhance their flavor, and a new favorite is born. This recipe, sourced from Martha Stewart Living in June 2018, takes 45 minutes to prepare and yields 24 small squares.
To make these Blondies, preheat the oven to 350 degrees and toast the walnuts on a rimmed baking sheet until fragrant, about 6-7 minutes. Let them cool, then chop them up. Brush a 9×13 inch baking pan with melted butter and dust with flour, shaking off any excess. In a medium bowl, whisk together the flour and salt. In a large bowl, stir together the melted butter and 2 cups of brown sugar until combined. Add the eggs and mix until incorporated. Stir in the vanilla and rum. Fold in the flour mixture with a spatula until just combined, then fold in half of the chopped nuts.
Transfer the batter to the prepared pan, smoothing the top with an offset spatula. Sprinkle the remaining nuts and 2 tablespoons of brown sugar on top. Bake until the edges are golden and a tester inserted into the center comes out with a few crumbs, about 22-24 minutes. Transfer to a wire rack and let cool completely before cutting into squares. These golden treats can be stored in an airtight container at room temperature for up to 3 days.
If you dont want to use rum, you can increase the amount of vanilla to 4 teaspoons.
