The apple pie is definitely a labor of love when made at home. Whats the best way to make one? If this is your first attempt, dont worry if the crust tears or folds. The pie will still be delicious and appetizing. Making pies requires a little patience – but watching your friends and family enjoy the results makes it worthwhile. Source: Everyday Food, November 2006. Ingredients: 1/4 cup all-purpose flour, peeled and leveled. Basic pie crust for apple pie, 2 discs. 2 tablespoons fresh lemon juice, from 1 lemon. 4 pounds apples, such as Empire, Granny Smith, Gala, Cortland, Winesap, or a mix. 3/4 cup sugar. 1 teaspoon ground cinnamon. 1/2 teaspoon salt. 2 tablespoons unsalted butter, cut into small pieces. Directions: 1. Lightly flour a large piece of parchment paper. Place a dough disc in the center. Roll from the center out, forming a 12-inch circle. (Use the parchment to roll the dough and flour the parchment as needed to prevent sticking.) Transfer the dough (still on the parchment) to a baking sheet; cover and chill. Repeat with the second dough disc. 2. Preheat the oven to 450 degrees, with the rack in the lowest position. Remove the first circle of dough from the refrigerator. Wrap around a rolling pin (ignoring the parchment), and carefully move over a 9-inch pie plate. Gently lift the edges and lower the dough onto the pie plate so that it hugs the bottom and sides. Avoid stretching the dough, which will cause it to shrink during baking. Chill. 3. Place the lemon juice in a large bowl. Peel, core, and slice the apples into 1/4-inch-thick slices. Add the remaining half, then add to the lemon juice (to prevent them from turning brown) as you work. Add the sugar, flour, cinnamon, and salt. Toss to combine. 4. Remove the pie plate lined with dough from the refrigerator. Fill with the apple mixture, gently packing the apples and mounding slightly in the center. Dot with butter. Brush the edge lightly with a circular shell of water. Remove the remaining dough from the refrigerator. Place over the apples. Press along the moistened edge to seal.
