This recipe for a milk-filled triple cake can be prepared in advance and the cream can be crushed before serving. Martha made this recipe on episode 711 of “Martha Bakes”. It serves 12 people and requires unsalted butter, room temperature, for greasing the baking dish, 6 large separated eggs, 1 cup of sugar, 1/2 teaspoon of kosher salt, 1 cup of all-purpose flour, sifted, 1 can (14 ounces) of sweetened condensed milk, 1 can (12 ounces) of evaporated milk, 1/4 cup of whole milk, 2 cups of heavy cream, and 1/4 cup of confectioners sugar. To prepare, preheat the oven to 325 degrees and butter a 3-quart baking dish. In an electric mixer fitted with the paddle attachment, beat the egg yolks and sugar on high speed until light and fluffy. In another bowl, beat the egg whites and salt to soft peaks. Using a rubber spatula, fold the whites into the yolks until almost combined. Sift the flour over the eggs and fold in gently. Spread the mixture in the prepared dish and bake until golden and pulling away from the sides of the dish, 20 to 25 minutes. Transfer to a wire rack and let cool for 20 minutes. In a medium bowl, whisk the three milks together. Pour evenly over the cake. Cover with plastic wrap. Chill for at least 1 hour and up to 1 day. To serve, beat the confectioners sugar and cream to soft peaks. Fill a pastry bag fitted with a round tip that is 1/2 inch wide, and pipe the cream in a decorative pattern, if desired.
