This cake with an old-fashioned style only contains three ingredients: store-bought cake, whipped cream with mint extract, and chocolate chips. To make the mint cream, blend heavy cream, sugar, and mint extract until stiff peaks form. Then, assemble the cake by spreading each chip with about 1/2 tablespoon of mint cream to form logs. Place the logs horizontally on a wax paper-lined dish and gently press to form a roll. Cover the roll with the remaining mint cream using a small spoon or knife. Chill for at least 4 hours or up to 2 days. To serve, remove the wax paper from the cake, sprinkle with chocolate chips, and slice into rounds with a serrated knife.
