Ingredients include 1 envelope (1/4 ounce) of gelatin, 1 3/4 cups of soda water (divided), 1/3 cup of fresh lemon juice, 1/3 cup of sugar, unsweetened whipped cream for serving, and lemon zest for garnish. To make the dessert, mix the gelatin and 1/4 cup of soda water in a small bowl. Let it stand in a saucepan, heat the lemon juice and sugar until the sugar dissolves. Remove from heat and stir in the gelatin mixture until dissolved. Transfer to a bowl and stir in the remaining soda water. Chill until set, about 5 hours. Serve with whipped cream and zest.
