Ingredients: Sugar Cookies – 2 cups unbleached all-purpose flour – 1/2 teaspoon baking powder – 1/4 teaspoon kosher salt – 1/2 cup (1 stick) unsalted butter, room temperature – 1 cup sugar – 1 large egg – 1 teaspoon pure vanilla extract
Royal Icing – 5 tablespoons meringue powder – 1 pound confectioners sugar (about 4 cups) – Blue food coloring, optional – 1/4 cup white and blue sanding sugar each
Directions: 1. Sugar Cookies: In a large bowl, sift together flour, baking powder, and salt. 2. With an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. 3. Add flour mixture; mix on low speed until combined. Wrap in plastic; chill 1 hour. 4. Preheat oven to 325 degrees. On lightly floured surface, roll out dough to 1/8 inch thick. Cut into fish shapes 1 to 3 inches long with a paring knife or cookie cutter. Transfer to ungreased baking sheets; bake until firm, about 30 minutes. Bake for 10 to 12 minutes, until edges begin to brown. Cool on wire racks. 5. Royal Icing: Beat meringue powder and a scant 1/2 cup water with an electric mixer on low speed. Add confectioners sugar, scraping down sides, and beat until soft peaks form, about 10 minutes. Thin with more water to fill or “flood” shapes, adding more water as needed. Add food coloring if desired. 6. Decorate cookies with icing and sanding sugar.
