Yield: Ingredients: Cooking spray with vegetable oil 1 cup all-purpose flour, plus more for dusting 1/2 teaspoon baking powder 1/4 teaspoon salt 2 1/2 ounces (5 tablespoons) unsalted butter, softened 3/4 cup sugar 1/2 teaspoon finely grated lemon zest (optional) 1/2 teaspoon pure vanilla extract 2 large eggs 1/3 cup whole milk. Directions: 1. Preheat oven to 350 degrees. Spray a 9×13 inch rimmed baking pan with cooking spray and line with parchment paper. Dust with flour, tapping out excess. Whisk flour, baking powder, and salt together in a bowl. 2. Cream butter and sugar with a mixer until pale and fluffy. Beat in zest and vanilla, if using. Add eggs, 1 at a time, beating well after each addition. Reduce speed to medium and add flour mixture in 2 additions, alternating with milk. 3. Spread batter in prepared pan. Bake until a tester inserted into center comes out clean, 15 to 17 minutes. Let cool on wire rack.
