These Marmalade Barley Scones were developed by pastry chef Kim Boyce. Try them out! Recipe source: Whole Living, December 2010. Yield: approximately 3 cups. Ingredients: 5 organic oranges, 4 varieties of organic blood oranges, 4 varieties of organic Meyer lemons (or substitute 2 organic oranges and 2 organic lemons), 3 cups sugar. Directions: 1. Place a small plate in the refrigerator to test the jam later. Wash and dry the citrus. Using a vegetable peeler, remove the zest (the outermost layer of the peel) from 1 orange, 2 blood oranges, and 2 Meyer lemons. Cut the strips into thin matchsticks, about 1/16 inch wide. Add the strips to a small pot and cover with cold water. Bring the pot to a boil over high heat and boil for 30 seconds. Drain the strips, rinse with cold water, and set aside. 2. Cut off both ends of each fruit. Using the flat side of a knife, remove the pith and peel from each fruit. Discard the peel. Cut the fruit into quarters, removing any seeds or tough, pithy centers. Cut each quarter into pieces about 1 to 2 inches in size, saving all the juice that drips onto the cutting board. 3. Measure the fruit and any remaining juice (you should have about 6 cups total). Transfer to a medium, heavy-bottomed pot. Add 6 cups water to the pot and bring the mixture to a boil over high heat. 4. When the mixture boils, reduce the heat to medium. Simmer the uncovered fruit syrup for 1 hour, or until it has reduced by half. Skim off any white foam that accumulates on top and stir occasionally. 5. Add the blanched zest and sugar to the pot. Stir to combine, then heat over high heat until the mixture boils. Reduce the heat to medium and simmer for about 10 minutes. The mixture should be boiling gently. Begin stirring the orange jam constantly after 10 minutes. Continue to simmer for about 20 minutes. 6. When the jam is thick enough to leave a trace on the bottom of the pot when you run a spoon through it, it is ready. 7. Remove the plate from the refrigerator. Spoon a dollop of jam onto the plate to test the set. It
