This recipe is for a classic dish of bacon and egg pasta, with many variations available – some with added cream, sometimes wine and parsley too. From the book “The Crazy Crazy”, by Lucinda Scala Quinn (Craftsman Books). For 6 servings, the ingredients are 1 pound of pasta, 1/2 pound of bacon, cut into 1/2 inch pieces, 3 large eggs, 1 cup of grated Parmesan cheese, plus extra for serving (optional), and freshly ground black pepper. To prepare, boil a large pot of water on high heat and cook the spaghetti. Meanwhile, cook the bacon in a large skillet over medium to low heat for 8 to 10 minutes. Drain the pasta, add it to the skillet with the bacon, and toss together. In a small bowl, beat the eggs, cheese, and pepper. Pour over the pasta, and toss well. Serve immediately with grated cheese, if desired.
