This delicious soup is loaded with nutritious vegetables like shiitake mushrooms and spinach. The recipe is from Everyday Food, January/February 2009 and takes 35 minutes to prepare with 15 minutes of total time. The ingredients include 2 tablespoons of vegetable oil, 12 ounces of sliced shiitake mushrooms, 4 green onions, 1 minced garlic clove, 1 tablespoon of peeled and minced fresh ginger, coarse salt, 2 cans of low-sodium chicken broth, 1/2 package of soba noodles, a handful of torn spinach, 2 tablespoons of fresh lemon juice, and 1 tablespoon of soy sauce. To make the soup, heat oil in a large pot and add mushrooms, green onions, garlic, and ginger. Season with salt and cook for 6 minutes. Add broth and 3 cups of water, bring to a boil, and add soba noodles. Cook for 5 minutes and add spinach. Cook for 1 minute and add lemon juice and soy sauce. Serve with green onions.
