To make one sandwich, you will need 1 teaspoon of unsalted butter, 1 large egg, coarse salt, 1 toasted English muffin or 3-inch soft bread, separated, cooked bacon (optional), cooked sausage patty (optional), shredded gruyere (optional), chopped fresh herbs such as chives, parsley or basil (optional). Directions: 1. Heat butter in a small non-stick pan until melted. In a small bowl, whisk egg with a pinch of salt. Add egg mixture to the pan. 2. Using a heat-resistant rubber spatula, gently pull the egg from the sides of the pan towards the center. When the egg begins to set, gently stir until it forms curds, about 2 minutes. 3. Once the egg is fully cooked, fold it into quarters and place it on the bottom half of the English muffin or French bread. Add cheese, bacon, sausage or herbs as desired; top with the remaining half of the English muffin or baguette.
