This recipe for scalloped potatoes is a traditional recipe that can be prepared the night before serving. Rich with a cheesy layer, the potatoes can easily play the side dish to almost any main dish. Serve the mashed potatoes with your favorite meat and watch your family fall in love. Source: Martha Stewart Living, April 1995. Serves 14 to 20. Ingredients: 3 pounds Yukon gold potatoes, peeled and thinly sliced, 3 cups milk, 1 garlic clove, 3 tablespoons unsalted butter, softened, kosher salt and freshly ground pepper, 1 cup heavy cream, 5 ounces Gruyere cheese, shredded. Directions: 1. Preheat the oven to 325 degrees with the rack in the lower third of the oven. Mix the chopped potatoes with the milk in a large pot over high heat. Bring the mixture to a boil and immediately reduce the heat to low; cover and cook over low heat until the potatoes are just tender, about 3 minutes. 2. Place a colander over a large bowl and drain the potatoes, reserving the milk. You should have 2 cups of thick, starchy milk. If the potatoes have absorbed more than 1 cup of milk, add enough milk to bring the reserved milk volume to 2 cups. 3. Rub a 3 1/2-quart oval baking dish with the garlic and butter. Arrange the potato slices in the baking dish. Season with salt and pepper. Add the remaining butter and pour the reserved milk over the potatoes. Sprinkle the cheese on top. 4. Transfer the baking dish to the oven and bake until the cheese is deep golden brown and the milk has reduced and thickened, 80 to 90 minutes. Remove from the oven and serve immediately.
