This soup is wonderful and healthy throughout the winter season. The recipe includes butter, onion, garlic, carrot, French green lentils, bay leaf, canned tomatoes, salt, black pepper, Italian bread, escarole, and extra-virgin olive oil. The directions are to melt the butter and sauté the onion, garlic, and carrot for 5 minutes. Then add the lentils, bay leaf, tomatoes, salt, pepper, and water. Simmer for 40 minutes. Meanwhile, toast the bread cubes in the oven at 425 degrees for 7 minutes. Add the escarole to the soup and cook for 5 more minutes. Adjust the seasoning and serve in four bowls with the toasted bread cubes and olive oil. Note: If you cant find French green lentils, substitute brown lentils.
